Orecchiette is an emblematic dish from Puglia, Italy. It takes its name from the characteristic shape of the little ears obtained by pressing the dough with the thumb.
Traditionally, orecchiette are prepared with turnip greens, garlic, chilli pepper and possibly sausage, for an even heartier dish. They are also delicious with meat sauce or other spicy sauces.
The recommended cooking time is 12 to 16 minutes.
Rustichella d'Abruzzo was founded in 1924 in Penne, a small Italian town in the province of Pescara, under the name Pastificio Gaetano Sergiacomo, and today is the artisan pasta brand used by the world's top chefs.
