Oro de Melque extra virgin olive oil is an unfiltered oil produced in Spain in the Montes de Toledo region, in San Martín de Montalbán and Navahermosa, in the south of the province of Toledo. There, they produce two varieties of oil, cornicabra and arbequina. Both are single-varietal extra virgin olive oils of excellent quality. Arbequina is a limited production oil, made exclusively from olives from the first harvest. When it is green, its fruity taste comes from the early harvest and has a greenish colour and a bitter almond flavour. Mild oil is more fluid, with a sweet taste and a green colour. Cornicabra oil is fruity and aromatic, with medium tones of bitterness and spiciness. The different flavours and textures of exotic fruits such as avocado become apparent when the oil is obtained from riper olives at the end of the harvest.
