Extra virgin olive oil produced in the Sierra de Cazorla (Jaén) with early olives of the Royal variety harvested under the full moon in October. Cold extraction at a temperature below 25ºC and high concentration of polyphenols. Special and limited selection.
The nose is intensely fruity with a predominance of tomato plant aromas, with a background of fruits of the forest and flowers of the sierra. Culminating with a surprising reminiscence of aromatic herbs from the Serra, such as thyme.
On the palate the bitterness is almost imperceptible, together with the spiciness that increases little by little, being persistent. The retronasal aroma is dominated by mint and basil.
Food pairing: It enhances the flavour when paired with bread and soft cheese, fresh salads, grilled fish, grilled vegetables, pasta with garlic and herbs and fruits such as strawberries and peaches.
