This extra virgin olive oil from Priorat (Tarragona, Spain) is a single variety of the Arbequina variety.

Its profile is balanced and complex, with a clearly identifiable fruity green olive flavour. It has a range of secondary vegetal aromas, including green grass and green nuts, almond, green tomato, fennel and ripe banana.

On the palate, it has a slightly almondy taste, combining sweet and bitter nuances. Its slight bitterness does not interfere with the oil's initial profile.

Uses: raw, in salads or on hot, freshly prepared dishes (fish and meat). The non-dominant nature of its aromatic profile means it can be used in a variety of preparations, where the overall flavour is more important than that of the oil.

Celler Masroig is the largest producer of virgin olive oil in the Priorat region, in the province of Tarragona. These mills produce extra virgin olive oil under the protected designation of origin Siurana.

The geological features of the Priorat region, with its limestone, granite and slate soils, as well as a suitable climate, with cold weather when necessary and the right degree of humidity, are factors that favor the cultivation of olive trees and give the extra virgin olive oil produced its own organoleptic characteristics.

The main variety grown in the region is the Arbequina variety, which accounts for 98% of the harvest, with the remaining 2% made up of the Rojal variety.

The promotion of quality from the farm, throughout the production process and right up to bottling, has resulted in the two most prized treasures: Oleum Priorat and Oleum Priorat Elixir. Oleum Priorat is a mature profile while Oleum Priorat Elixir is a green profile.

Thanks to the vast territory we own, chemical and organoleptic analyses are carried out to select the guidelines for the continuity of the profiles. Oleum Priorat benefits from the technical support of the Institut de Recerca Tecnológica Alimentaria (IRTA), which periodically monitors and inspects olive oil mills.
