Organic and biodynamic extra virgin olive oil produced in Yeste (Albacete) with early cold pressed Picual olives. It is valued as one of the best oils of the Sierra del Segura and is endorsed with the Demeter certification.
On the nose it has an intense green fruitiness with aromas of green leaf, green tomato, green apple and almond. On the palate it has positive attributes of very balanced spiciness and bitterness.
It is a highly valued oil for its stability, versatility and ability to enhance the flavour of many dishes. Perfect for meats, white fish, salads, artichokes, scrambled eggs, stir-fried vegetables, toasted bread and rice dishes.
Organic olive growing aims to produce extra virgin olive oil without the use of synthetic chemical products, whether fertilisers, herbicides or pesticides, thus helping to protect natural resources and biodiversity.
Biodynamic agriculture is an agricultural philosophy that goes one step further than organic. The farm is conceived as an organism in which plants, animals and humans are integrated together. In addition, it works with the vital energies available in nature, taking into account the cosmic rhythms (solar, lunar and planetary cycles) in production.
The result of the union of organic and biodynamic is an extra virgin olive oil of very high quality, with a unique sensory profile and a more intense and complex flavour, as well as greater protection of the environment, acting in favour of the biological processes that facilitate life in the ecosystem of the olive farm.
Finca Tindávar produces an organic and biodynamic extra virgin olive oil of the Picual variety, valued as one of the best oils of the Sierra del Segura, a region renowned for its olive-growing tradition and the high quality of its oils.
In 2012 they decided to change the way of cultivating the land offered by agribusiness for more respectful techniques, eliminating the use of herbicides and insecticides and progressively starting to change chemical fertilisation for organic. In 2014 they cultivated their entire farm in Yeste (Albacete) with organic farming techniques and a year later they applied for organic certification.
In 2016 they discovered a new type of agriculture that goes beyond organic farming and allows them to move towards self-sufficiency. An agriculture that is completely respectful of the environment, that enlivens the soil, that treats it as a living organ and where plants are cultivated following natural rhythms. An agriculture where the mineral, plant, animal and human kingdoms form a Farm Organism. This is biodynamic agriculture.
