This extra virgin olive oil is a single variety of the Cuquillo olive.
The Cuquillo or Lechín de Granada olive is indigenous to the Murcia region.
Its fruit is small and slightly elongated, and it is harvested late. This variety is known for its distinctive flavour and is prized for the production of extra virgin olive oil.
Its flavour and aromatic profile may be distinct due to this peculiarity in the harvesting process.
Recommended uses: mayonnaise, sauces, stews. Salads, for those who like a mild olive oil.

Finca Olimendros is located in the Cañada de Albatana, Jumilla, in the northwest of the province of Murcia, in an area between the Castile-La Mancha plateau and the Mediterranean coast.
The altitude of 600 m. above the sea, the climate, between continental and dry Mediterranean, its orientation at midday and its soil of slightly high pH, are important and differentiating factors in the cultivation of this olive grove.
Surrounded by pine forests, it is an extension of more than 500 ha. Planted with olive and almond trees and sprinkled with water of excellent quality. The treatment of trees, subject to rigid controls of integrated production, make their fruits of high quality products and free of toxic chemical residues.
At the center of the farm are the olive grower and the olive factory, where the fruits of their own harvests are harvested.
The mill, equipped with advanced machinery, produces the four types of oil from the four varieties of olive that are: Arbequina, Picual, Cornicabra and cuquillo.
Fast harvesting, transportation and grinding, as well as careful storage, ensure that they obtain a lower quality oil, with all its aroma and natural color.
In addition, Olimendros strives to provide its customers every day with superior quality and a variety of products, such as chamomile and gordal sevillanas.
