Martelli

Martelli makes one of the world's best-loved artisan gourmet pasta, all the pasta they sell is handmade and is obtained by slowly mixing the best durum wheat flour with cold water, which is then cut in bronze moulds and dried at a traditional low temperature (between 33 and 36 °C) for about 50 hours. The result is a tasty paste with good porosity, which allows it to absorb well all the seasonings that accompany it.
