Its oil comes exclusively from fields of Bajo Aragón, where the origin of olive production dates back to Roman times. Some of the oldest millenary olive trees in Spain are in the area. Mis Raíces, is made during the first half of November with olives of the variety Empeltre 80% and Arbequina 20% at its optimum moment of maturation.
