Organic extra virgin olive oil of the Cornicabra and Manzanilla varieties produced in Villaconejos (Madrid) and protected under the PDO Aceite de Madrid. Made with home-grown green olives harvested during the months of October and November at a very low temperature.
This extra virgin olive oil is intensely fruity on the nose, with hints of green leaves, artichoke, fennel, tomato and apple. On the palate the bitter and spicy notes are present in medium intensity and well balanced, resulting in a very persistent oil on the palate.
Food pairing: Ideal with bread and tomato, cooked artichokes, cheese, eggs and white fish.
Oleum Laguna is a family project founded in Villaconejos (Madrid) in 2017 by siblings Pedro and Pilar Laguna. Both grew up watching their great-grandfather, their grandfather and their father making extra virgin olive oil, who passed on their passion for the olive grove to them. In fact, Pedro Laguna has been an official taster for more than 20 years.
At Oleum Laguna, they do an excellent job of obtaining olive juice with authentic aromas and flavours that surprise and delight, all of this by letting themselves be guided by the hand of those who know and have experience to achieve the essence of the fruit. They also have an enormous respect for nature and care for the environment, thus achieving a product of the highest quality with naturalness, freshness and great flavour characteristic of their 100% organic oils.
Despite being the youngest oil mill in the Community of Madrid, Oleum Laguna has already been able to win national and international quality awards. In 2024 they were the fourth best EVOO in the world at the Evooleum Awards with a score of 95 out of 100, being the first oil from Madrid to make it into the prestigious Evooleum Top 10. They have also won awards in other competitions in Zurich, Athens and Japan and have been highlighted by Flos Olei.
