Picual
A few metres from El Molino de San Fernando, the Buenavista estate is located in the Guadalquivir valley in the province of Cordoba, the second largest Extra Virgin Olive Oil producing region in the world, in the heart of Andalusia.
The interaction between the soil, the climate, the agricultural work and the olive tree is vital to the Casa de Alba oil project. The "terroir" (a concept normally applied to the vine) is the way in which the plant, the land and nature communicate with man. It is one of the key factors in generating the diversity of oils and gives them their raison d'être.
In the heart of the estate we find the area known as "el Mugronal", where we can find centenary olive trees whose traditional planting frame of up to 14×14 metres allows unique aeration and light to enter the plant, thus favouring the healthy growth and homogeneous ripening of the olives.
The olive mill where this natural Picual olive juice is produced, ALCUBILLA 2000, S.L., is a mill located in Castro del Río (Córdoba) which uses the most modern extraction techniques and whose production and packaging process is certified under the most demanding quality and food safety standards: ISO 9001, IFS Food v6-Higher level and ISO 14001.
The olives are received at the mill within 1 hour of being harvested on the farm and are milled immediately to avoid loss of quality. In less than 2 hours the precious juice is obtained and taken to the winery.
The production system used is that of 'cold extraction by means of a continuous 2-phase process'. The different phases, the oily liquid and the solid (alperujo), are separated by centrifugation processes, without any contact between the oil and the oxygen. The organoleptic and analytical characteristics of the oils remain perfect and unaltered.
