This extra virgin olive oil is harvested at its optimum moment of ripeness, giving rise to an exceptional complexity of aromas. In order to select this optimum moment of ripeness, field monitoring is carried out, analysing the fruit from different plots, from which only those with the best parameters are selected. The objective is the search for excellence, combining exhaustive management of the olive grove throughout the year to obtain olives with excellent characteristics, and control of all the basic operations of the production process in the oil mill.
On the nose it has an intense green olive fruitiness, with notes of freshly cut grass, olive leaf, tomato, artichoke, green apple, green banana and green almond. On the palate it is a full-bodied oil, characterised by its traditionally well-balanced bitterness and spiciness. The intensity of the green fruitiness is in balance with the green flavour and with the presence in the retronasal passage of all the initial olfactory notes.
Food pairing: Its balance of clean, fresh and fruity nuances make it a perfect extra virgin olive oil for all kinds of uses. It is highly recommended for frying, as the Picual variety maintains its properties at high temperatures. It is also recommended for use with red meats or stews and as a dressing for salads or toast.

The history of Finca La Pontezuela dates back to June 1974, the year in which a family from Mora decided to purchase some land located in the municipality of Los Navalmorales, in the province of Toledo (Castilla-La Mancha), a town that has been dedicated to olive growing since ancient times.
After acquiring this land, they decided to embark on an exciting adventure: the fascinating world that surrounds the cultivation of centenary olive trees, the care of the land and its landscape, until they managed to obtain a high quality extra virgin olive oil. Moreover, it is complemented by being located next to the Cabañeros National Park and, at the same time, close to the Sierra de Gredos.
The possibilities of transformation and improvement of the environment encouraged this family from Toledo to undertake a series of improvements in relation to agricultural and landscape aspects. Today, it is as if they were in the heart of the Tuscan countryside, surrounded by centuries-old olive trees and their magnificent extra virgin olive oil, with sunsets that mesmerise all those who decide to visit them.
If we look at the meaning of their premium brand Finca La Pontezuela 5 Elementos Gran Selección, it represents the four elements of Mother Nature (water, earth, fire and air) to which they decided to incorporate, as could not be otherwise, a fifth element: the wood of their olive trees.
