At Conservas Artesanas Rosara they select the best Piquillo peppers and roast them over beech wood. They peel them without water so that they do not lose their flavour, stuff them with a delicate boletus edulis béchamel sauce with a sweet-acid contrast provided by a sauce based on reineta apples. It is a very laborious process with a delicious result. Also only 1.8% fat and gluten-free.
