Serrana

The Serrana Espadán olive variety, very characteristic of the provinces of Valencia and Castellón, produces an oil that is protected under the Protected Designation of Origin "Aceite de la Comunidad Valenciana". Nowadays, this exclusive variety is mainly used to produce premium extra virgin olive oil, harvesting the olives very early and producing green, very fruity and aromatic oils with mild spiciness and bitterness.
