Organic and biodynamic extra virgin olive oil produced in the province of Jaén with cold pressed Frantoio olives. The Frantoio variety originates from the region of Tuscany (Italy).
On the nose, it stands out for its intense fruitiness, with notes of fresh grass, artichoke and nuts. On the palate, it is characterised by its balanced and complex flavour, accompanied by a very pleasant bitter and spicy touch.
It is a very unique and versatile oil. It is ideal for enhancing pasta dishes, grilled meats and salads, bringing a sophisticated and healthy nuance to each recipe.
Organic olive growing aims to produce extra virgin olive oil without the use of synthetic chemical products, whether fertilisers, herbicides or pesticides, thus helping to protect natural resources and biodiversity.
Biodynamic agriculture is an agricultural philosophy that goes one step further than organic. The farm is conceived as an organism in which plants, animals and humans are integrated together. In addition, it works with the vital energies available in nature, taking into account the cosmic rhythms (solar, lunar and planetary cycles) in production.
The result of the union of organic and biodynamic is an extra virgin olive oil of very high quality, with a unique sensory profile and a more intense and complex flavour, as well as greater protection of the environment, acting in favour of the biological processes that facilitate life in the ecosystem of the olive farm.
At Zais they are committed to organic, sustainable and biodynamic agriculture to offer an extra virgin olive oil of magnificent quality. Their farm is located in the municipality of Linares, in the province of Jaén, and has 60 hectares.
Biodynamic agriculture conceives the farm as a living, self-sufficient organism in which trees, plants, animals and humans form part of the same interconnected entity.
A fundamental pillar of biodynamic agriculture is soil fertility. To achieve this, it is necessary to provide compost to increase the microbiological activity of the soil. At Zais they compost manure from nearby extensive farms, adding other complements and materials (vegetable waste, eggshells, vegetable waste, minerals...) to enrich it, controlling throughout the process the humidity, temperature, texture, etc. to achieve an optimum product.
When it comes to protecting the soil, no chemical products are used, but plant covers are used, which prevent erosion, contribute to the fertilisation of the crop and provide a suitable habitat for the plants' natural enemies, while increasing the soil's organic matter and its biological activity. Chopping of pruning residues is also used, which reduces weed growth and increases water retention capacity.
Zais offers three varieties of extra virgin olive oil, Picual, Arbequina and Frantoio, each one separately for sale to the end customer. In addition, it has EU Organic certification and Demeter certification.
