Pajarera

The Pajarera variety is an olive variety that comes from the Sierras Subbéticas, the Guadajoz Valley and the Campiña Sur, in the province of Córdoba. Its name refers to the birds' desire for its fruit, as they are almost a pest for this variety of olive. With similar characteristics to the Picuda olive, the Pajarera is a variety that is increasingly appreciated and recognised by both experts and consumers, as its extra virgin olive oils have a great personality, with a very sweet and pleasant entry in the mouth, a slight bitterness and a balanced, slightly more pronounced spiciness.
