Lechín

The name of the Lechín variety comes from the whitish colour of its pulp, reminiscent of milk. It ripens early and harvesting is complex and costly due to the high adhesion of the fruit to the branches. Lechín extra virgin olive oil is fluid, greenish-yellow in colour and dense in texture. It has a medium fruity aroma and hints of green almonds and fresh vegetables. Its flavour is neither spicy nor bitter, and overall it is balanced. It is not common to find single variety extra virgin olive oil from the Lechín variety. Due to its low stability, it is usually presented in coupages with varieties that are more resistant to oxidation, such as Picual or Hojiblanca.
